Ham & Cheese Empanadas

This is great way to use up leftover ham. Take a shortcut and use store bought biscuit dough or feel free to make your own from scratch. Either way these will be a new family favorite!

Yields1 Serving
 2 cans flakey biscuits
 4 cups ham chunks
 4 oz cream cheese
 1 cup shredded cheddar cheese
 1 poblano pepper or 1/2 green pepper
 ½ medium onion

Open cans of biscuits. Using a rolling pin flatten each biscuit into approx. 6 inch circles. Set aside

Put all filling ingredients into a food processor to chop and combine.

Use about 1/4 cup of filling for each pie. Place in center of biscuit leaving room around the edges. Fold dough in half and crimp edges to close completely.

Make 2-3 slashes on top of pastries with a sharp knife to allow steam to escape while baking.

Bake according to package instructions. Mine were baked at 325° for about 20 minutes Enjoy!.
