Sloppy Joe Stuffed Peppers

This sloppy joe filling is delicious and healthy. I've used it to stuff peppers as in this recipe but also in lettuce wraps, on top of salads, served in zucchini boats and just eaten with a spoon - yes, it's that good. Each serving is 1 lean, 3 condiments and 1-2 greens*.
*Weigh out your peppers or other veggies to get the correct measurements of greens.

Yields2 Servings
 8.75 oz ground beef, cooked and drained
 ¼ cup reduced fat shredded sharp cheddar cheese
 3 tbsp reduced sugar ketchup
 1 tbsp yellow mustard
 ½ tbsp apple cider vinegar
 1 tbsp Sugar free pancake syrup
 ½ tsp chili powder
  tsp salt

Brown ground beef in a medium skillet over medium high heat. Drain fat and measure out 8.75 oz. Return to skillet. Save the rest for another use.

Combine sauce ingredients in a small bowl. Pour sauce over ground beef. Heat skillet over low heat. Stir until combined. Continue cooking for 4 to 5 min or until heated thoroughly stirring often.

Cut bell peppers in 1/2 and remove stem and seeds. Fill each pepper half with 1/4 of sloppy joe mixture. Top each pepper half with 1 tbs of cheese. These can be popped in the freezer at this point to save for a future meal or cooked right away,

Bake at 375 ℉ for 20 to 30 minutes until peppers are tender and cheese on top is melted and bubbly.
